Caldereta Stew

Ingredients

3-4 lbs beef cut into 2 inch cubes

5 garlic cloves crushed

2 tbsp olive oil

1 cup water or broth

1/2 cup sliced onions

1/4 cup red bell peppers, cut into cubes

1/2 cup green peas (optional)

3-5 cubed and potatoes

1 bay leaf

1 tsp white pepper

salt and pepper to taste

1/2 cup tomato sauce

3 tbsp tomato paste

1/4 cup of vinegar

1 tsp sugar

hot sauce to taste if wanting a spicy versions

1/2 cup oil for frying meat

Directions

Fry cubed potatoes until golden brown  and set aside

Fry cubed meat until cooked on both sides and set aside

Now add garlic, onions and sauté until onions are transparent

Add meat and water and spices to mixture

Cook for 5 minutes and now add all the other ingredients except the peas, peppers, potatoes and boil for another 10 minutes

Add potatoes and peppers to mix and let cook for another 5 mins and until the sauce thickens. If sauce doesnt thicken to your desired taste, add 1 tbsp of cornstarch and 3 tbsp of water and mix, then mix into pot and it will thicken up with hot mixture.

Add peas (optional) at the end, cook another few mins and then ready to serve

Optional:  marinate meat with a bit of flour,  vinegar, garlic powder and salt and pepper for an hour before frying.  Makes it tastier and the sauce thicker too.
